
A new fun way to expand your party food selection is with cake donuts. Donut pans are widely available and inexpensive, plus you can make them with most sponge cake recipes and decorate them to suit your occasion. My younger kids wanted to help me make rainbow coconut cake donuts, as everything has to be rainbow, but my eldest and i also made chocolate ones for us.
Here is my coconut cake recipe (which will make 18 small donuts)
Ingredients:
- 125g of butter (melted in the microwave)
- 1 cup of brown sugar
- 2 eggs
- 1tsp coconut extract
- 1 cup desiccated coconut
- 1 3/4 cups of sr flour
- 3/4 cup buttermilk
For Decoration
- chocolate to top the donuts
- toppings, such as sprinkles, cookies, dried fruits, candy
Preheat the oven to 180c. Place all of the ingredients into a large bowl and mix well. To make the rainbow donuts, separate this mixture into 6 small bowls and colour the batter with gel colours. Fill the donut tin up to half way with the mixture and bake in the oven for 10 – 12 mins until the cakes are cooked. turn them out onto a cooling rack and when they are cooled, drizzle melted chocolate on top of the donuts and let your kids have fun decorating them. So easy, I can’t wait to incorporate these into a party set up x
