Chocolate and Coconut Hot Cross Buns

After making dark chocolate and orange hot cross buns for ohitsperfect last Easter my kids developed a taste for them while i was testing my recipe and they soon became a favourite. This year they stared asking for some as soon as they appeared in the shops. Here are my rainbow chocolate and coconut hot cross buns x

What you will need:

  • 4 Cups of Flour
  • 1/3 Cup of Caster Sugar
  • 3/4 Cup of Desiccated Coconut
  • 2 tsp Mixed Spice
  • 1/2 tsp Ground Cloves
  • 1/2 tsp Cinnamon
  • Pinch of Grated Nutmeg
  • 1 tbsp of Dried Yeast
  • 40g Unsalted Butter ( extra to serve)
  • 1 1/2 Cups of Warm Milk
  • 1 Egg
  • 1/2 Cup of Sultanas
  • 1 Cup of Chocolate Chips
  • Oil

  • 1/2 Cup of Flour
  • 1/3 Cup of Water
  • Wilton Gel Colours

  • 1/3 Cup of Water
  • 2 tbsp Caster Sugar

  • Piping Bags (I just use zip lock bags and clips)
  • Tea Towel
  1. Place the flour, caster sugar, coconut, spices and yeast into a large mixing bowl and mix. Melt the butter and lightly beat the egg. Warm the milk slightly in a saucepan and once its tepid, add the butter, egg and half of the milk to the bowl and mix. Keep adding little by little milk to the bowl and mixing until a soft dough forms. You might not need all of the milk.

2. Lightly flour a clean surface and knead the dough a little. Flatten the dough and place the sultanas and chocolate chips on top. Fold and knead the dough to incorporate the ingredients. Lightly knead for ten minutes. Place the dough into a lightly oiled large bowl, cover with a clean damp tea towel and leave in a warm place to double in size (1 to 1.5 hours)

3. Tip the dough out of the bowl onto a lightly floured surface and cut into twelve portions. Take a portion into your hands and stretch and fold the dough into a ball shape. place them snuggly into a lined and greased tin (20 x 20cm). Cover again with the damp tea towel and allow to rise for another half an hour.

4. Pre heat your oven to 190 degrees C. To make the topping, mix the flour and water into a smooth paste. Divide it up and colour it to your liking, then place into bags. Squeeze it on to your hot cross buns to decorate them and then place them into the oven for around 15 minutes or until golden brown. If you are unsure you can test that they are cooked in the middle with a knife. While they are cooking make the glaze by heating the sugar and water in a saucepan and boil for 3 minutes. Once the buns are cooked, brush the glaze over them and enjoy hot with some butter x
